I would have to go with TPC Scottsdale, Corporate office is in Phoenix and got to play there last year, it was a lot different than any other course I've been lucky enough to play, something about playing in the middle of desert and the course itself being the only thing green anywhere around you.
I grew up 10 minutes from Shinnecock Hills, but never got to play. Probably my best course was Atlantic in Bridgehampton...was a caddy there for a couple of seasons.

Oak Hill Rochester, NY
Whistling Straits and Black Wolf Run, Kohler
Pelican Hill Newport Beach
Bajamar - Bajamar Mexico
Pinehurst #6 and Carolina Country Club. Played #2 but course was beat to crap.
Wild Dunes Ocean Course
I haven't played a ton of places and am not a big time golfer, but the Golden Horseshoe Gold Course in Williamsburg is the nicest course I've been on. That was fifteen or more years ago so I don't know what it's like now, but it was gorgeous and incredibly manicured at the time.
Long Cove in Hilton Head.
